Sesame-flavored Fried Pork Cutlet

Ingredients

For 4 persons

  • 4 slices of pork loin (thin slices)
  • Appropriate amounts of salt and pepper
  • 2 eggs
  • 1 tablespoon olive oil
  • Appropriate amounts of flour and frying oil (olive oil)

Batter

  • 1 cup bread crumbs
  • 2 tablespoons Roasted Black Sesame Seeds
  • 3 tablespoons each Parmigiano-Reggiano and minced parsley

Cold Tomato Sauce

  • 3 tomatoes
  • 1 tablespoon minced parsley
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • Small amounts of salt and pepper
Directions
  • Pound the pork flat and even with a tenderizer and sprinkle salt and pepper on both sides.
  • Mix the ingredients for the batter in a flat container such as a vat.
  • Mix the eggs, a pinch of salt (not in the list of ingredients) and 1 tablespoon olive oil in a bowl.
  • Coat the pork from (1) with flour, dip it in the beaten eggs from (3), and then coat fully with the bread crumbs from (2).
  • (Make the cold tomato sauce.) Cut the tomatoes into cubes, mix with the other ingredients, and then chill.
  • Pour frying oil into a pan to a depth that will cover the pork, heat the oil and then deep-fry the pork from (4).
  • Drain the oil from the pork, place on a dish and cover in the cold sauce from (5).
Tips
Cheese with sesame seeds creates a fragrant flavor.
