Chicken Pho
Ingredients
For 1 persons
- 100 g chicken breast
- 1/2 teaspoon salt
- 1 teaspoon sake if available
- 70 g rice noodles
- 1 tablespoon granulated chicken broth
- 400cc water
- 1 teaspoon fish sauce
- 1/2 teaspoon sugar
- 1/4 red onion
- 50 g bean sprouts
- 1 tablespoon chopped green onion
- Appropriate amount of cilantro
- 1 tablespoon fried onions
- 1 lime wedge
- Appropriate amount of Hot Sesame Oil
Directions
- Rub the chicken breast with salt, sprinkle with sake, and let stand for 10 minutes. Slice the red onion. Put chicken and 400cc water in a pot and bring to a boil, then simmer over low heat for 10 minutes. Remove chicken from heat and slice.
- Bring a large pot of water to a boil and cook rice noodles as indicated.
- Add granulated chicken broth to the boiled chicken soup from 1, add red onion and bean sprouts and cook lightly. Season with fish sauce and sugar.
- Add boiled and drained rice noodles to 3 and serve. Sprinkle with fried onions and green onions, garnish with cilantro and lime wedges, and finish with a drizzle of Hot Sesame Oil.
