Rainbow Salad with Honey Ginger Dressing
Ingredients:For 4 persons
Rainbow Salad
- 1/8 red cabbage
- 1/4 red bell pepper
- 1/4 yellow bell pepper
- 1/2 carrot
- 10 cherry tomatoes
- A handful of broccoli sprouts
- 100g edamame (green soybeans)
Honey ginger dressing
- 1/2 grated onion
- 1 teaspoon grated ginger
- 1/2 teaspoon grated garlic
- 1 tablespoon lemon juice
- 1 tablespoon honey
- 1 teaspoon Pure Sesame Oil
- 1 teaspoon soy sauce
- 50cc olive oil
Directions
- Combine all ingredients for honey ginger dressing and mix well.
- Cut each red cabbede, carrot, red and yellow bell pepper into strips. Cut cherry tomatoes in half as desired. Boil edamame and remove from pods.
- Pour the dressing from 1 over 2 and mix well to taste.
