Rainbow Salad with Honey Ginger Dressing

Ingredients:For 4 persons

Rainbow Salad

  • 1/8 red cabbage
  • 1/4 red bell pepper
  • 1/4 yellow bell pepper
  • 1/2 carrot
  • 10 cherry tomatoes
  • A handful of broccoli sprouts
  • 100g edamame (green soybeans)

Honey ginger dressing

  • 1/2 grated onion
  • 1 teaspoon grated ginger
  • 1/2 teaspoon grated garlic
  • 1 tablespoon lemon juice
  • 1 tablespoon honey
  • 1 teaspoon Pure Sesame Oil
  • 1 teaspoon soy sauce
  • 50cc olive oil
Directions
  • Combine all ingredients for honey ginger dressing and mix well.
  • Cut each red cabbede, carrot, red and yellow bell pepper into strips. Cut cherry tomatoes in half as desired. Boil edamame and remove from pods.
  • Pour the dressing from 1 over 2 and mix well to taste.
